&lt;li&gt;Ferran Adria, the Spanish chef who is the creator of molecular gastronomy and owner of el Bulli restaurant, announced at the Madrid Fusion Summit that el Bulli will be closed to the public during 2012 and 2013, opening again in 2014. Like many magazines today, it seems that &lt;em&gt;Sibaritas&lt;/em&gt; was struggling to compete with electronic media, and the effects of the recession. Will the suspension be permanent? Nobody knows.  According to &lt;a href=&quot;http://clk.about.com/?zi=1/1hc&amp;#038;zu=http://www.decanter.com&quot;&gt;decanter.com&lt;/a&gt;, later this month Sr. Peñin will launch guiapeninenruta.com, a wine travel blog, with sections on Spanish wine regions and individual wines. &lt;p&gt;I relish the days I spent with my family in Spain over the Christmas holidays. The only thing I miss more than my family is Spanish food, or rather the food that my mom and sister make! My sister Mari made this recipe for dinner one night and as soon as I tasted it, I knew I had to post it.  It's an example of how a simple, easy dish can be flavorful and utterly satisfying.  Brown thinly sliced veal or beef fillets and saute leaks, carrots and white wine.  Puree the vegetables to make a sauce and in about 30 minutes you have a delicious main course.&lt;/p&gt;

&lt;p&gt;The Spanish know that using an inexpensive cut of veal or beef to make a large pot of stew can feed the whole family and not blow the budget. Stews are a popular and traditional Spanish dish all over Spain.  Although this stew recipe is originates from the Madrid region in central Spain, similar dishes are served where winters are cold - from Madrid northward to Navarra and Cantabria. Chunks of beef with onions, garlic and peppercorns are simmered in white wine until tender. A touch of vinegar gives the sauce a tangy flavor and compliments the fried green peppers and potatoes that accompany the stew. &lt;/p&gt;

&lt;p&gt;&lt;em&gt;Tigres&lt;/em&gt; are one of the most popular &lt;em&gt;tapas&lt;/em&gt; in northern Spain. Finely chopped mussels are mixed with onion, pepper, tomato sauce and béchamel to form a delicious filling. They are then breaded and lightly fried, served in the half-shell.&lt;/p&gt;
&lt;p&gt;Every visit to Spain we hover over my sister while she cooks, since we are always on the look-out for new recipes to share with you. So, this &lt;em&gt;tigres&lt;/em&gt; recipe comes to you from Mari, who recently discovered a new &lt;em&gt;tigres-making&lt;/em&gt; technique. Rather than mix the béchamel sauce into the chopped mussel filling, her technique is to stuff the mussels, then coat them with béchamel sauce. This separation takes a bit more time, but gives the filling more flavor. In addition to separating the béchamel, two layers of breadcrumbs separated by the beaten egg are used. This double breading makes the outside crust very crispy.&lt;/p&gt;

It is most famous outside Spain for its high quality wines, but within its borders, La Rioja's cuisine is well-known for exquisite lamb and pork dishes, sausages, and sweet peppers. In this Rioja-style dish pork chops are fried and then simmered in a rich tomato sauce made with sauteed onions, garlic, peppers and white wine. &lt;p&gt;Everybody has eaten chili at a Super Bowl party, right? How about preparing Asturian &lt;em&gt;Fabada&lt;/em&gt; instead? &lt;em&gt;Fabada&lt;/em&gt;, one of the most beloved dishes in Spain and Latin America is loaded with beans, pork ribs, garlic and Spanish &lt;em&gt;chorizo&lt;/em&gt; sausage. It's a great dish to serve on a winter afternoon.&lt;/p&gt;
&lt;p&gt;Our simplified &lt;em&gt;fabada&lt;/em&gt; recipe uses what we call the &quot;Quick Soak Method&quot; for beans, eliminating overnight soaking. It also cuts down the cooking time to about 2 1/2 hours, most of which is simmering the &lt;em&gt;fabada&lt;/em&gt; in a pot.  Make it Saturday and warm it up Sunday afternoon.&lt;/p&gt;
