My first reaction was that buying Oreos means not having to prepare treats, as Oreos are treats enough. But my second reaction, after my wife prepared the Oreo Balls herself, was that mixing cream cheese with Oreos and covering them in chocolate does, surprisingly, turn good into great.

These no-bake cookies, which can be prepared in advance by children, are so delicious that we've designed our Purim baskets around them. This Purim's Mishloach Manot will be black and white.

Photo © 2010 Giora Shimoni, licensed to About.com, Inc

I'll just defrost them on Thursday night, make a gravy for them on Friday morning, and heat them up right before Shabbat dinner.

Photo © 2006 Giora Shimoni, licensed to About.com, Inc

For a low fat, reduced carb version, try this Lite Potato Kugel recipe. It contains fewer egg yokes and no oil. For a fun and different way to serve potato kugel, make potato kugelettes (see photo). Just spray muffin pans with non-stick spray, fill with the potato kugel batter and cook for 30-40 minutes.

Photo © 2006 Giora Shimoni, licensed to About.com, Inc

The vegetables we like to roast are sweet potatoes, zucchini, eggplant, red and yellow bell peppers, purple onions, garlic and mushrooms. If you are serving children or vegetarians, consider serving the vegetables with a small bowl of techina, as dipping the vegetables into the paste of ground sesame seeds adds protein.

Photo © 2010 Giora Shimoni, licensed to About.com, Inc

Apricot Chicken for Tu B'Shvat

In honor of this week's Tu B'Shvat Shabbat, I'm going to dress up my easy-to-prepare, crowd-pleasing Apricot Chicken by simply adding dried apricots to the pan. Prepare the sauce and marinate the chicken on Thursday night. Then Friday, just 1 1/2 hours before Shabbat, bake the chicken. It tastes fresh and delicious when served, along with farfel or rice, for dinner on Friday night. And the sweet sauce means any left-over chicken (unlikely) will be moist and tasty enough to serve for Sabbath lunch.

Photo © 2009 Giora Shimoni, licensed to About.com, Inc
