The next day he would make stock from the turkey bones and then lentil soup using the stock. The lentil soup was one of my favorite meals because it turns out turkey and lentils just go together perfectly. This is a great way to not only make use of the bones, but some of the leftover turkey as well. Second, even a breast is a lot of food for two or three people. But occasionally I get nostalgic for the turkey dinners I grew up eating and cook one myself &amp;#8212; as I did last year and made a point of photographing. But comparing the real thing with what most of us are familiar with is like comparing a Mercedes to a Saturn, they both accomplish the same purpose but the Mercedes does it much more luxuriously. Also, a true Bolognese is a more a ragu (stew) than a sauce where the liquid flavors the meat rather than the reverse.
