I love the taste of Sally Lunn bread, but I also love how easy muffins are to make. While I love the traditional breads of France, I've almost always found the recipes too complex and requiring constant misting or the recipes are for large batches. Since many of these breads are made without milk, the shelf life of the bread is 24 hrs. The bread becomes stale by the next day. With my &lt;A HREF=&quot;http://breadbaking.about.com/od/yeastbreads/r/petitspains.htm&quot;&gt;french rolls&lt;/a&gt;, petits pains, I kept the tradition of letting the bread dough rise 4 times to develop the flavor, but I took out the misting process and reduced the amount of rolls down to 12 so that they could be eaten in one day. Leftover rolls are toasted in the morning to hide the staleness.
