For 85 years this restaurant has served up some of the best barbecue in the country. Famous for barbecue chicken served in a white barbecue sauce, aficionados continue to flock here to take their bite of history. These days Big Bob's Gibson's is in the hands of Chris Lilly.

Making Meatball Sandwiches

A good meatball sandwich is a thing of beauty. Regardless of the occasion these wonderful sandwiches make any event great. By grilling your meatballs you add great flavor and reduce the fat. Trouble is, grilling meatballs isn't that easy, unless of course you thread the meatballs onto skewers to help hold them together and to make them manageable on the grill. So follow these easy steps and make the best meatball sandwiches you've ever had.

What are you cooking for the big game?

According to the Hearth, Patio and Barbecue Association, Super Sunday is the most popular winter grilling day of the year with as many as 62% of grill owners planning on firing up for the big game. This means that a lot of you are planning on hitting the grill before kick off. Question is, what are you going to be grilling (or smoking) this year. There are favorites that I just can't get away with out, like my hot and spicy brined chicken wings. Of course the big one tends to by any number of varieties of sausage from simple hot dogs to brats. So this week's question is about what you plan to make. I've tried to list some of the more popular items but if you don't find your menu item here, hit the comment button at the bottom and tell us:

First Look: Minden RoastMaster Gas Grill

I've talked about Minden grills before. These are inventive grills that strip away a lot of the frills that seem to get loaded on these days and give you a basic grill that cooks well for a decent price. Now they have a built in version that you can put in your own enclosure. What I've liked before in the freestanding units this built in version keeps. The cooking surface fits level with the enclosure space so you have a large open grilling area that isn't boxed in by the body of the unit. The lid drops away in the back so you can get it out of the way completely.

What's new is one this unit is the addition of two "oven" burners. These burners are separated from the cooking surface so you don't have to worry about flare-ups. What they let you do is use this grill just like an oven for baking and roasting. This gives you a level of versatility that you don't see on many gas grills.

At this time I don't have a price for this unit but I will be talking with the inventor next month and will definitely have more information for you then.

Rotisserie Cooking

Give your grilling a whole new spin and get all the self basting, roasted flavor of the rotisserie. This is the perfect method for grilling whole chickens or roasts and most anything else that is too large to grill conventionally.
Rotisserie Cooking originally appeared on About.com Barbecues & Grilling on Sunday, January 31st, 2010 at 02:17:05.

Permalink | Comment | Email this

First Look: MAK Grills

Introduced last year, MAK Grills is the latest player in the pellet market. Made in the USA (about 50 miles away from where Traeger used to make there grills), MAK Grills recently picked up BBQ Legend Bruce Bjorkman as it's director of Marketing and Public Relations. Now anyone in the know would wonder if MAK Grills isn't picking up US manufacturing where Traeger left off when they shipped their manufacturing of their residential grills (read smokers) off to China.

Well, aside from the politics, I think we are all more interested in the grills. Right now you have one model to choose from the MAK Grill 2-Star General. This $2,000 grill gives you 429 square inches in the main chamber and 285 square inches in the warmer box. You can add extra space with an upper grate in the main chamber giving you 858 square inches, so this isn't a little unit. Like most pellet cookers these days you get a computer controlled feeder unit to maintain temperature. This looks to be a good unit giving you a pretty wide range of features. In fact this unit is loaded with a number of unique features that certainly make it competitive in the pellet market.
